The New Year brings with it the desire to start fresh and eat clean. Monica Stoutenborough, health coach and owner of PuraVegan Café & Yoga, makes getting that extra dose of greens easy with the smoothies and juices offered at her cafe in the DeBaliviere Place neighborhood.
PuraVegan's most popular smoothie, Green Machine, is filled with greens, bananas, coconut water and spirulina powder. The combination gives Stoutenborough what she needs to be an active restaurateur. "Protein, carbs, potassium, minerals – it's the whole package," she says.
Stoutenborough makes the smoothie by first pouring the liquid into the blender, filling it to the 12-ounce line. "If you try using the blender measurement line after filling it with greens, it isn't accurate," she explains, as liquid gets in the leaves and the result is a thin smoothie. "I prefer this one to be thick!"
As for the bananas, the pro move is to freeze them. Stoutenborough peels, chops and freezes the bananas before blending. You also need to be sure the smoothie is blended long enough – until there are no longer banana chunks knocking around the blender. Once blended, smoothies are poured into a tall glass, large mason jar or to-go cup at PuraVegan.
Stoutenborough says this smoothie is filling enough to serve as a meal, but if she's having a super-active day, she'll make it even bigger. Try this incredibly-good-for-you blend at home with PuraVegan's recipe below and enjoy a healthy start to the new year!
Green Machine Smoothie
Serves | 1 8-ounce serving |
- 12 ounces coconut water
- 1 frozen banana, peeled and chopped
- 1 large handful of kale
- 1 large handful of spinach
- A few dandelion greens
- 1.5 teaspoons spirulina powder
| Preparation | Pour the coconut water into the blender.
Add the remaining ingredients and blend until it is smooth. You should no longer hear any banana chunks knocking around in the blender.
