Taco Circus fans can now get their fix even earlier.
The restaurant, which opened in Bevo in early 2015, is revamping its hours to focus on breakfast and lunch service. Starting Mon., July 2, Taco Circus will now be open from 8am to 3pm every day (except Tuesday, when the restaurant is closed), with additional dinner service until 8pm on Fridays and Saturdays.
Owner Christian Ethridge says the change in hours helps bring the restaurant's focus back to his true passion: breakfast tacos. The restaurant has changed its hours a few times since originally opening its doors, and most recently didn't open until 11am on the weekends.
"I always wanted to be the go-to place for breakfast tacos," Ethridge, an Austin native, says. "I feel like I understand those ratios and have probably eaten more breakfast tacos than anyone else in the city. People really do love our breakfast, especially on the weekends, so opening at 11am, I felt a lot of resistance from customers."
The menu of build-your-own tacos (including a St. Louis-inspired pork steak option), burritos, 12-inch quesadillas and nachos won't see any major changes. But Ethridge says he hopes the new hours will also draw more attention to the restaurant's entrée-style dishes, including steak and eggs, a migas plate and a chorizo and egg plate. He also plans to introduce an option for ordering tacos in bulk and get rid of the restaurant's soda fountain machine.
"I've always wanted to be on the forefront of breakfast tacos and breakfast quesadillas, and with those hours I just wasn't able to do it," Ethridge says. "This just made sense."
Taco Circus will now be open Sunday, Monday, Wednesday and Thursday from 8am to 3pm and Friday and Saturday from 8am to 8pm. The restaurant is closed Tuesdays.
