In downtown Cottleville, Missouri, a neighborhood mainstay recently got a total overhaul. VB Chocolate Bar, which opened in 2013, closed its doors on May 12, making way for a revamped concept: Upshot Coffee. The new café debuted on May 28, featuring a focus on daytime offerings including coffee, baked goods, organic cold-pressed juices and bone broths.

“It was really about taking everything we’ve kind of figured out over the course of seven years and focusing heavily on what we really fell in love with on the coffee side,” says owner Conor VanBuskirk. “We’re also passionate about bringing healthier items to our neighborhood and thought that juices and bone broths were both underserved in the area.”

VanBuskirk works with a team that consists of Jared Durci, Alex Beeny, Jesse Wagner, Landon Shuffett and Caleb Betz to bring the rebranded concept to the 2,200-square-foot space, which features around 50 seats. Renovations to the clean and modern interior, led by SPACE Architecture + Design, included some restructuring along with new furniture and light fixtures. Updates include butcher block counter tops and a new coffee bar. 

Carryover items from VB Chocolate Bar’s menu include favorites such as flavored lattes, pour-over coffee, hot chocolate, quiche, wildberry scones, housemade pop tarts and cinnamon rolls. Upshot currently carries coffee from Brandywine Coffee Roasters, Sump Coffee, Sweet Bloom and Botanical Roasters. Tea offerings include products from Spirit Tea and Big Heart Tea Co.

Rotating specials include offerings like a Captain Crunch latte with housemade Captain Crunch milk and espresso as well as coffee-blueberry lemonade with cold-pressed lemons, blueberries and Costa Rican coffee syrup. Newer items include toasts made with bread from area bakery Mr. Meowski’s Sourdough. Toppings include combinations such as ricotta and blueberry as well as cucumber, goat cheese and honey.

A grab-and-go cooler features “Beets and Bones,” an in-house brand of housemade juices and bone broths. Around eight varieties of cold-pressed juices are available including options such as Shades of Green with celery, cucumber, kale, Swiss chard, fennel, apple, pear, lime, parsley, dandelion, kiwi and basil. Tonics include options like Turmeric Temple Elixir with turmeric, lemon, orange, cayenne and raw honey. 

“They’re really good for you and taste incredibly good,” VanBuskirk says. “The majority of us need more nutrients in our diet and this is a good way to get them in an enjoyable way.”

Frozen take-home broths include classic beef bone broth, spicy beef bone broth, mushroom-seaweed-beef bone broth, chicken bone broth, pork bone broth and turkey bone broth. Homemade ice cream is also on hand.

“I’m grateful for customers new and old,” VanBuskirk says. “We’re just excited to continue moving forward to create a business that gives back to the community.”

Upshot Coffee is open Monday through Friday from 7am to 5pm, Saturday from 8am to 5pm and Sunday from 10am to 4pm.
