Seoul Taco draws on recipes from owner David Choi's childhood. 

Seoul Taco is headed to the Windy City.

The fast-casual Korean-Mexican restaurant is set to open its fourth location this spring at 738 N. Clark St. in Chicago.

“Chicago is such a melting pot of cultures, and we’re excited to be a part of such an amazing food scene," owner David Choi said in a release.

Seoul Taco, which started as a food truck, opened its first brick-and-mortar location in St. Louis in 2012. After quickly outgrowing the space, the restaurant relocated to its current home in the Delmar Loop. A second location opened in Columbia, Missouri, in February 2015, followed by a third in Champaign, Illinois, this month.

The menu at the Chicago restaurant will mimic that of the other locations, including Korean-inspired tacos, quesadillas, burritos and nachos that draw on recipes from Choi's childhood. The space itself will feature a similar street art-inspired design, featuring murals from two Chicago artists: chef and graffiti artist Won Kim and Eric DeBatt. Alex Morales of Smartmouth Design will oversee the interior design and Chicago-based Eikon Creative will handle Seoul Taco's video and photography branding work. 

“I’ve been lucky enough to develop friendships with some truly inspiring people in the arts and creative spaces,” Choi said. “You’ll see that reflected in the design and also how we have fun with the brand.”

The Chicago Seoul Taco is set to open its doors in late spring.
