In Wildwood, the team behind Llywelyn’s Pub has cooked up a new concept that retains parts of its forebearer’s name: Sllyce Republic Pizza. The casual restaurant debuted in June, offering pizzas, sandwiches and more.
“It’s Roman-inspired gourmet pizza, and everything we do is made to order. We don’t stretch your dough until you order it. We put care into every pizza we make and also have appetizers, sandwiches and salads,” says executive chef Adam Cantor, who works with Llywelyn’s president Tom Behnen to bring the eatery to the area.
Sllyce fills the 6,500-square-foot space previously occupied by a location of Llywelyn’s Pub. Around 200 seats total are available between the dining room and patio. Aesthetic changes include new signage and a bocce ball court installed in the posterior dining area adjacent to a game room with amusements.
According to Cantor, Sllyce’s versatile pizza dough, which utilizes ingredients including salt and olive oil, is cold fermented to create a thin crust with a chew – somewhere in between a St. Louis-style and New York-style consistency.
The most popular pie so far is The Titan with pepperoni, Italian sausage, prosciutto, bacon and red sauce. Cantor’s personal picks are the Romulus and Remus with pizza sauce, pepperoni, pepperoncini and mozzarella as well as the Bacchus with oven-roasted grapes, goat cheese, arugula and balsamic drizzle.
According to Cantor, a secret pizza menu is in the works, featuring unique topping combinations such as one with toasted ravioli and another with fried green tomatoes and smoked pork. Pizza by the slice is also available on the weekends in large New York-style slices.
“Pizza doesn’t have to come from picking up your phone on Saturday night and getting it delivered to your house. It can actually be a real experience. That’s what we’re going for,” Cantor says.
Highlights from the appetizer menu include The Triumvirate, or three housemade meatballs topped with marinara sauce and mozzarella cheese. The meatballs are also available as a sandwich in The Hercules with housemade meatball patties, pizza sauce, mozzarella and Parmesan cheese.
The Constantine is another signature dish that consists of eight toasted ravioli topped with mozzarella cheese sauce, diced tomato, chopped arugula and fried jalapeño, served with marinara. Salads include the Hera with romaine and iceberg lettuce, kalamata olives, pepperoncini, cucumbers, red onion, tomato, Greek dressing and feta cheese.
From the bar, choose from over 30 beers on tap, four wines on draft and a cocktail menu featuring options such as the Sllyce Spritz with Prosecco, Aperol and soda. A gelato case occupies a portion of the dining area, featuring imported frozen treats in flavors such as hazelnut, strawberry cheesecake and salted caramel.
Sllyce Republic is open Tuesday through Thursday from 4 to 11pm, Friday from 4pm to 1:30am, Saturday from 11am to 1:30am and Sunday from 11am to 10pm.
