Prioritized Pastries Treats

Prioritized Pastries will be the first St. Louis bakery dedicated exclusively to gluten-free and vegan selections. 

St. Louis' first pastry shop dedicated to offering exclusively vegan and gluten-free goodies is opening Saturday in the Southampton neighborhood. 

Alex Feick, owner and pastry chef of Prioritized Pastries, is a lifelong St. Louisan who has worked in local restaurants and cafés for years. While working at The Mud House, she began experimenting with vegan pastries and became known for them, particularly her citrus-olive oil tea cake. Now, after working in other kitchens including the now-shuttered Niche and The Libertine, Feick is opening up an entire bakery dedicated to the vegan and gluten-free pastries. She said most people will have a hard time telling the difference.

“Customers have a hard time knowing that my pastries are not traditional because they taste pretty identical to the flavors and textures they are accustomed to," Feick said in a release. 

To that end, Prioritized Pastries offers the same goodies you would expect at any bakery. The brunch party platter offers a mix of muffins, scones, cookies, bars and cupcakes. For a snack to satisfy your sweet tooth, try a whoopie pie or Feick's version of a Cosmic Brownie. Want to go overboard for a celebration? Try the Party Like It's Your Birthday cake, a rainbow-sprinkle-covered cake piled high with cupcakes, brownies and other treats from Feick's kitchen.

And perhaps most importantly, because the entire bakery is vegan and gluten-free, there is no risk of cross-contamination that might be present at other bakeries using those ingredients in other products. 

"Not only can customers have [peace of mind] that the pastries will never accidentally be compromised by exposure to other ingredients, but parents of children with allergies or dietary restrictions can come in and shop with confidence," Feick said. 

Prioritized Pastries will have its grand opening on Friday with activities like a photobooth. CamDan coffee will also be there serving coffee drinks from a mobile espresso cart.

Prioritized Pastries will be open Wednesday through Friday from 9am to 6pm and Saturday from 2 to 8pm. Sunday hours may follow.
