As construction continues on Parlor, Kansas City’s new food hall scheduled to open in late August in the Crossroads, the partners of RedWether Collaborative are ready share some big details. They have announced their new restaurant partners to date, and the new general manager of their soon-to-open social hot spot.

Parlor is located in a two-story, 18,000-square-foot red brick building located at 1707 Locust. The food hall will offer two full-service bars, while seven different rotating restaurants will serve as culinary incubators for up-and-coming chefs, food trucks, pop ups and food artisans. This will result in a unique and ever-changing environment to eat, drink and socialize.

Parlor’s new general manager, Dominic Hoeferer, will be the face of the new food hall. Trained as a chef, Hoeferer comes to this project having worked in many restaurant kitchens in New York before accepting a position as the general manager of restaurants for Eataly in New York. He has relocated to Kansas City and will be responsible for the day-to-day operations for Parlor.

“We have an idea of what we want Parlor to be, and we think the key will be the consistency in the guest experience, combined with the evergreen nature of our rotating stable of chefs and restaurants,” says Hoeferer. “For our new restaurant partners, we want to provide them the freedom and opportunity to do their food, with enough structure to allow them to grow and evolve.”

With seven kitchens available inside of the space, the partners of RedWether have announced six of the seven upcoming restaurants. The seventh is currently under contract negotiations and will be announced soon.
