Marie Griffin had a rising dream of opening the first artisan bread bakery in Atchison, Kansas. When the perfect space opened up at 626 Main Street, she wasted no time. In October 2018, she opened Atchison Bread Co.
"It was really just a need for good bread," Griffin says. "There were no artisan French breads or sourdough or anything like that around. The closest thing is in [Kansas City]."
Atchison Bread Co. offers those items in addition to rye bread with berries, pumpernickel bread, bagels, muffins, scones, cookies, pies (both full and miniature sizes) and small cakes. Griffin turns out an impressive lineup of baked goods with a small staff of just four bakers, including herself.
Griffin previously owned a cookie company called M.A.D. cookies. The company name stands for Make A Difference, as 10 percent of sales went to local food banks that help fight hunger. In the future, Griffin would like to sell her M.A.D. cookies in Atchison.
"I love most getting to know people that you meet, and seeing how much they enjoy having fresh good products," she says. "I've met so many more people because they are interested in having good, healthy products."
