Located in South Kansas City, Martin City is known for its concentration of food and drink establishments – Jack Stack Barbecue, RC’s Chicken, Martin City Pizza and Taproom, and Taqueria Dos de Oros, to name a few. This summer, you can add The Scoop to the list of destinations. The walk-up ice cream parlor will open in late July across the street from sister business Martin City Brewing Co.

Martin City Brewing’s co-owner Matt Moore and general manager T.J. Carr are co-owners of The Scoop. Carr, who will oversee daily operations as managing partner, has “always loved ice cream.” He began developing test batches for the brewery’s pub in January with the goal of opening his own shop.

An opportunity arose earlier this year to secure space in the building that formerly housed KC Running Co. Moore soon struck a deal with the shop’s owner. He grew up working in family restaurants such as RC’s Chicken in Martin City. Coincidentally, The Scoop will occupy the building that was the original location of RC’s Chicken, established by Moore’s grandfather.

Moore and Carr are enthusiastic about opening a family-friendly venue to serve ice cream and desserts.“T.J. started making ice cream for the pub. It was awesome,” Moore says.

Carr brought out an experimental batch of Thin Mint ice cream to sample. He is sourcing dairy that has a high percentage of butterfat to produce an extra creamy texture. The ice cream was indeed rich, silky and flavor-forward, a tasty antidote for warm weather.

Inspired by local ice cream parlors like Betty Rae’s, Carr plans to develop his own roster of flavors. “We’ll have strawberry cheesecake, pistachio, s’mores, peanut butter and jelly, birthday cake, spiced chocolate, maple bacon, and caramel with candied pecans,” Carr says. “We’ll have traditional flavors, too.”

Carr also plans to offer unconventional beer-flavored ice cream, using beer, wort and hops from Martin City Brewing. He intends to prepare vegan ice cream made with almond milk, as well as sundaes and other creamy confections. “We’ll make ice cream nachos with crumbled waffle cones, caramel, fudge and other toppings,” he says.

Customers will order from a kiosk on the 1,000-square-foot front patio and pick up orders from the walk-up window. The Scoop’s 300-square-foot interior is devoted to production and may later serve as a production kitchen for additional desserts to supply the brewery’s sister restaurants.
