This summer, República is slated to open in Kansas City's Country Club Plaza, serving upscale Spanish fare. The latest project from local restaurant group Bread & Butter Concepts (of Urban Table, Gram & Dun and Taco Republic), República will open in the space previously home to Ingredient.

“We felt that the Spanish cuisine really hasn’t been a big influence on the market here in Kansas City, so we saw an opportunity in that arena," Tara Van Loenen, Bread & Butter's vice president of marketing, previously told Feast.

Dishes will include gambas la comal (grilled shrimp), albondigas (pork meatballs), a bocadillo Catalan sandwich and fried potato and chorizo with hot paprika mustard.

On Tuesday, Bread & Butter Concepts announced that Robert Cantú will be joining executive chef Bradley Gilmore as the chef de cuisine at the upcoming restaurant.

“I’ve had the opportunity to work closely with Robert on the menu development for República over the past month,” Gilmore says in a release. “I’m very excited to have him on our team. His passion and creativity in the kitchen has made a big showing during our tastings, and I can’t wait to see what else he brings to the table.”

República will serve a modern take on traditional Spanish entrees, including tapas and paella. Cantú, who comes to Kansas City from an executive chef position at Ruth’s Chris Steak House in New Orleans, says he's especially excited to develop a Spanish menu for the restaurant.

“My grandfather emigrated to the United States from Spain before I was born," Cantú says in the release. “He passed away two years ago at 96 years old, so this is special way to for me to explore my Spanish heritage.”

As previously reported by Feast, the restaurant will also serve wine out of porróns, traditional glass pitchers used in many regions of Spain. Shaped similar to a watering can, the container mimics a communal wine jug and has a spout used to keep wine from being exposed to air.

República will be open for lunch Monday through Friday with a limited menu, as well as dinner every night of the week after 4pm.
