Pairings Wine & Dessert Bar is set to close June 13 after a year and a half. As first reported by Ian Froeb, the restaurant (which served full meals despite its name) has been sold and will reopen as a different restaurant concept later this summer.
Executive chef Rob Beasley says the restaurant isn't owner David Pollman's "livelihood" — he is also a design engineer and owns a construction company — but it takes up a whole lot of his time. Pollman had an opportunity to sell which happened to coincide with Beasley's departure.
Beasley will be the new executive chef at Chaumette Vineyards & Winery in Ste. Genevieve; its former executive chef Adam Lambay left for LHM Hotel Group in April.
"Rex Hale [of the Restaurant at the Cheshire] is a great friend of mine, and he told me about it. I met Adam at the Hinkebein Elk Dinner I helped Rex with, and I heard he was leaving," Beasley says. "Rex hooked me up with [Chaumette's] Jennifer Johnson and [owners] Hank and Jackie Johnson, and after a six hour meeting I came out as the new executive chef."
Don't expect any menu changes at Chaumette for at least three months while Beasley gets his bearings and works on "fundamentals" with the crew. Look for some chef's specials in the meantime, and after a few months, a new menu that fully utilizes Chaumette's access to fresh, local produce and meat.
Beasley says he doesn't know anything about the new ownership of Pairings other than that it will be an Italian concept opening later this summer. Pollman could not be immediately reached for comment.
