Tazé Mediterranean Street Food has announced plans to open their first location in the Mercantile Exchange Building in downtown St. Louis.
Set to open in early spring 2015, the fast-casual restaurant named for the Turkish word for “fresh” will feature a variety of house-made Mediterranean dishes including shawarma, gyros and hummus.
“Tazé will offer fresh, healthy, daily-prepared cuisine using traditional Mediterranean cooking methods,” proprietor Justin Roth said in a release. “Customers will be greeted by the inviting aromas of the Mediterranean, homemade pita bread, an array of Mediterranean-inspired sides, sauces and toppings.”
Twin brothers Casey and Justin Roth along with their father, Steve, have enlisted Matt Borchardt, a veteran of L’Ecole Culinaire and Frasier’s Restaurant & Lounge, to consult with the family on initial recipe and menu development.
Tazé will be open for lunch and dinner, and will feature several mezes (small dishes) specials with beer and wine for happy hour. The restaurant will also feature a “build-your-own” entree format to accommodate vegans and vegetarians. Tazé's open kitchen will highlight two tandoor ovens, a pita oven and two vertical broilers.
“I’m looking forward to working with the Roth team to help develop their concept," Borchardt said. "Our primary goal is to offer St. Louis a new and healthy alternative. The menu will utilize as many fresh, local ingredients as possible, while sourcing antibiotic-free proteins and imported spices from around the globe.”
The Tazé team is working with SPACE Architecture + Design on the interior of the restaurant. Using a combination of natural wood, lush draperies and saffron-inspired colors, the design team will create several distinct seating areas within the 3,400 square-foot space. SPACE Constructors will build the new restaurant.
“It’s such a unique concept,” said SPACE’s Tom Niemeier. “We’re working to create a cozy-but-contemporary look that enhances Tazé’s concept of fresh, vibrant food.”
The MX is the first of several Tazé locations, and Casey Roth says they're planning to roll out more Tazé restaurants in the St. Louis area while exploring other cities for expansion.
Today, Justin Roth and Borchardt are leaving for a 13-day culinary jaunt through eight countries for research and menu development. Keep up with their travels on Twitter and Instagram at @tazestreetfood.
