Heavy Smoke BBQ is expanding.
The St. Louis-based food truck will open its first brick-and-mortar location at 4270 N. Service Road in St. Peters, Missouri, this fall.
Co-owners Chad Brewer, who has a background as a chef, and Chris Schafer, who has a sales background but has been doing competition barbecue for the past decade, started their food truck in 2017 after being friends for 20 years. Brewer, along with Schafer's wife, Danielle, both left their jobs to run the truck full-time while Schafer continued to work and run the business side of the truck, which is how everything ran until this year.
"And then, we decided to take the leap and open a restaurant," Schafer says.
With the opening of the brick-and-mortar location, Schafer will also be leaving his job to work the restaurant full-time. There, they will fuse his competition recipes with Brewer's experience as a chef to create dishes familiar to those who are fans of the food truck, and plenty of new dishes thanks to the abilities that a full location offers.
The menu will certainly include some of the food truck's biggest hits, like the STL Cuban Wrap (made with pit ham, pulled pork, Provel cheese, pickles and a white horseradish barbecue sauce that comes grilled in a flour tortilla) and the loaded tots (tater tots smothered in pulled pork, homemade queso and baked beans). But Schafer says that they'll be able to expand the menu past the truck's typical chicken, pork, brisket and occasional ribs to also include meats like burnt ends and turkey.
"Just trying to serve high-quality food, and we try to do it fast," he says.
The menu will also include from-scratch sides, including a pineapple slaw and a barbecue-rub spiced three-cheese macaroni.
Heavy Smoke BBQ is slated to open in late October or early November.
