The city’s latest luxury hotel, Live! By Loews, recently opened in downtown St. Louis, featuring a new upscale food-and-beverage concept: Clark & Bourbon.
The hotel – a joint venture between Loews Hotels & Co., The Cordish Companies and the St. Louis Cardinals –debuted on Feb. 26 as part of a $260 million St. Louis Ballpark Village expansion project. It features 216 rooms across eight stories as well as a variety of dining and drinking options.
As reported by Feast in January, the concepts include second-story bar, The Bullock, as well as grab-and-go concept River Market. Clark & Bourbon fills a 2,000-square-foot space on the ground floor, featuring homages to the St. Louis Cardinals and an open kitchen that offers a variety of steaks, entrees and small plates.
Executive chef Matt Lange, who previously served as the executive sous chef of Loews Chicago Hotel, heads up the menu of fine-dining fare.
“My approach is modern steakhouse with fun and inventive preparations using the best-sourced ingredients,” Lange says. “The restaurant is elegant, refined and approachable.”
According to Lange, steaks such as a prime New York strip and prime Delmonico rib eye are roasted on the bone with Mediterranean rock salt. Some of his favorite offerings from the menu include lobster dumplings in ginger butter as well as hot sauce fried chicken featuring a whole bird, homestyle grits, farm-roasted carrots and spiced honey.
Another highlight is truffle tagliatelle with egg yolk, Pecorino Toscano, arugula and bread crumbs. The Clark & Bourbon namesake dish is a burger with a double patty, Widmer Cheddar, onion strings, pickles and Clark sauce.
From the bar, dubbed Bar Bourbon, choose from a selection of specialty cocktails such as Mad Dash with Diplomatic Planas rum, banana and coffee. The restaurant also features a collection of 480 bottles of bourbon, rye, Irish, Scotch and Japanese whiskies in The Whiskey Room, which features original Cardinals road trunks that are said to have secret false bottoms used to smuggle bootleg bourbon during prohibition.
Clark & Bourbon is open for breakfast daily from 6:30 to 10:30am; for lunch daily from 11am to 2pm; and for dinner Sunday through Wednesday from 5 to 9pm and Thursday through Saturday from 6 to 10pm.
