In Belleville, Illinois, a new bakery offers colorful cakes and desserts as well as coffee, sandwiches and more. Sugar High Bakery debuted on Dec. 9 and is open for breakfast and lunch. The concept comes from owner and baker Amber Weiss.
“This is what I’ve wanted to do since I was 18. At 46, I'm trying to live my dream now,” says Weiss, who got her start in the kitchen learning how to create custom cakes at the age of 15.
By the time she was 18 years old, she had become head decorator at a Schnucks Bakery. Since then, she has made special occasion cakes for friends on the side and also gained experience working catering events. Recently, she quit her job as an accountant to pursue her passion for pastry.
Inside her Main Street storefront, visitors can find a rotating selection of Weiss’s sweets to choose from on a custom countertop she designed herself with an epoxy confetti-sprinkle pattern. The displays and shelves feature goodies such as cinnamon rolls, donuts, brownies, cookies, cupcakes, muffins and cake pops.
Gooey butter cake cookies sandwiched with cream cheese icing, rolled in sprinkles, are currently a favorite among regulars. Cake pops in flavors like Reese’s and brownies are additional popular picks, the latter cut into hearts or big squares and finished with assorted toppings such as icing and candy crumbles.
“Everything I always say is over the top here – hence the name ‘Sugar High,’” Weiss says.
Baked yeast donuts offered at the shop include everything from traditional glazed and Bavarian cream or jelly-filled options to treats topped with Oreos or cereals. Weiss also sticks to her roots by offering custom cakes decorated with American-style buttercream – call or message for special orders.
For breakfast, the bake shop offers items such as brunch burritos, bagels, croissants and quesadillas. The lunch menu is comprised of eight different sandwiches on Louisiana-style bread such as the BelleVegas with ham, roast beef, turkey, Provolone, lettuce, pepperoncini and giardiniera. Vegan options are available on both menus including items made with JUST Egg.
To drink, Sugar High offers soft drinks and a full line of hot or iced Goshen coffee, lattes and frappuccinos. The business also has a liquor license to serve alcohol for area events in the future.
“I’m excited to be in downtown Belleville. I think it has a lot to offer and it’s great to be a part of it,” Weiss says. “I do things my own way here. I put my heart into it, and that’s what makes a difference.”
Sugar High is open Tuesday through Saturday from 8am to 2:30pm.
