Maplewood is getting a new taste of Latin cuisine. 

Asador Del Sur has announced it will open its doors at 7322 Manchester Road on Aug. 19, serving up cuisine from both South and Latin America. The husband and wife team behind the project, Daniel Gonzalez and Maria Giamportone, will serve dishes from both of their varied cultural backgrounds.

“Our menu is a blend of carefully planned, but simple authentic dishes made with the best ingredients.” Giamportone said in a press release. “We hope, that when you step into Asador Del Sur you feel at home.” 

Dishes will include housemade chorizo, lamb sausage in a lemongrass stick, Uruguayan-style blood sausage, grilled sweet breads and vegetable parrillada. Giamportone’s Ecuadorian roots promise to shine in the seafood offerings, including Mediterranean red prawns, grilled lobster in chimichurri sauce and spicy crab in salsa criolla. Diners can also expect to see several cuts of grilled meat like skirt steak and bone-in rib eye. 

To complement the food offerings, the restaurant will also serve a variety of Uruguayan wines. 

Asador Del Sur will be open Wednesdays through Sundays, including brunch on the weekends.
