The Pastaria name is about to get a little bigger.
Pastaria Deli & Wine will open in the space that formerly housed Sardella this fall, as first reported by Sauce Magazine. The new Niche Food Group restaurant will serve as a permanent place to find many of the sandwiches – including tuna salad, caprese, chicken salad and meatball – and take-home items that the pop-up deli concept has offered amid the pandemic.
"We wanted something that was an extension of the brand of Pastaria," says owner Gerard Craft.
The deli-and-wine-bar concept is something that Craft says has been in mind for a few years now, inspired by many of the spots in Europe where you might only be able to find a panini and an apertivo. While for now the restaurant will be counter-service only, he hopes that a true wine bar can be added down the line. Guests will be able to eat sandwiches at limited indoor and outdoor tables, but they can also take them home along with items like fresh pasta by the pound, fresh sauces and take-and-bake lasagnas and pizzas.
"That's something that we want to grow into that deli brand as well," Craft says.
The restaurant will also serve as a bottle shop, with a fun selection that has a large focus on natural wines. Staff will be on-hand to help educate customers about the wines, especially ones that might be from smaller, boutique wineries.
And while limited seating will be available, the space will be suited for takeout, and the restaurant will offer options to help fit the experience to customers' comfort level. While you will be able to browse the selections and receive guidance from in-store staff, you will also be able to order online for takeout or curbside pickup, which Pastaria has offered throughout the pandemic.
There is no official opening date set for Pastaria Deli & Wine, but Craft says he hopes to open the space within the month.
