You don't have to drink alcohol to enjoy a crafted cocktail experience at home this Dry January.
Yellowbelly, the St. Louis restaurant from the same team as Lazy Tiger cocktail bar and Retreat Gastropub, has launched a line of nonalcoholic cocktails for pickup on Fridays in January. The zero-gravity cocktails are $20 each and contain 16 ounces, or four servings, to enjoy at home.
Tim Wiggins, Yellowbelly's beverage director and co-owner, has worked to develop a blend of hydrosols, or “botanic water,” for the line to ensure the zero-alcohol drinks are more cocktail-like than a plain old juice or tea.
“We are firm believers that zero-alcohol cocktails should still have the flavor and mouthfeel of an alcoholic beverage," he says. "With hydrosols, we distill fresh leaves, fruits, flowers and other plant materials to create a less concentrated nonalcoholic base. With the aromatics in place, thickening agents such as gum arabica are added to ensure that there is texture and body, which create a more interesting mouthfeel than the average juice or tea.”
The no-ABV cocktails come in four distinct flavors. The Faux-Groni has all of the complexity of its boozy counterpart, featuring juniper, pink peppercorn, red "vermouth" and red bitters. The Piña Co-Nada plays on a tropical colada with pineapple, coconut, cardamom, sage and citrus. The Moon Vacuum is a bright and tangy blend of tamarind, guava, pomegranate, grapefruit, hibiscus and citrus, and the Jupiter Juice pops with both color and flavors of passionfruit, almond, white jasmine, ginger and citrus.
Orders for zero-gravity cocktails can be placed online Tuesday through Thursday for pickup on Fridays. Orders can also be placed at Yellowbelly or Lazy Tiger.
