Cork & Rind has transformed into a natural wine bar.
The wine store originally opened in St. Charles, Missouri, in 2015 solely as a retail shop, but has since expanded into a natural wine and cheese bar as well. Guests can enjoy housemade sourdough bread, accompaniments like jams and jellies as well as cheeses while sipping wine. The store offers a rotating selection of wine by the glass, or you can open any bottle from the retail shop for a corkage fee.
The shop offers quality products at a good price.
Scott Stieven, Cork & Rind's director of marketing and guest relations, says that the transition into a bar as well as a store was inspired by the shop's customers – they wanted to try the wines that were available. That naturally led to a selection of cheese and charcuterie, which has brought Cork & Rind to where it is today. Board options include The Monger's Pick, full of carefully selected cheeses paired with sourdough, infused olives, fig jam and apricot chutney, or the Melty Cheese, featuring raclette served with roasted potatoes, Brussels sprouts and sourdough.
The shifting focus to natural and organic wines, though, was the doing of Cork & Rind owners Mike and Elizabeth Kinney. The two travel a lot, and during trips to places like Spain and France, they were exposed to natural wines and began tasting them more and more.
"They definitely really got on the bandwagon," Stieven says.
And they aren't the only ones, as Stieve says the shop has seen a "very positive response" to the new wine program.
In addition to natural wines, Cork & Rind is working on bring a curated whiskey and beer list to the bar. Stieven says that they are looking to concentrate on classic Belgian-style beers, as well as other local beers from St. Louis. In terms of whiskeys, the team is turning its attention to small-batch varieties. But don't worry; at Cork & Rind, wine will likely remain the star.
"We just want people to come and enjoy wine without the snobbery that's kind of behind wine sometimes," Stieven says. "It's just kind of a nice place to just come and enjoy wine."
