It may seem like a crime to dine at Katie's Pizza & Pasta Osteria without ordering one of Katie Collier's fresh pastas or hand-crafted pizzas, but you would be remiss to overlook one of the menu's additions for fall: the Chianti-braised short rib.
Next to the porcini risotto, which was also added for the fall, the short rib is the star of the restaurant's fall menu. You don't really need a knife for this meal: Braised for six hours, the meat completely falls apart when your fork touches it. The Chianti adds an underlying sweetness to the meat, which is balanced by the earthiness of the heirloom radishes and carrots served alongside the short rib.
The short rib is presented on a bed of rosemary-fontina polenta, which serves as the perfect vehicle for the excess juices from the meat, with a garnish of delicate cress. Pair the short rib with a Chianti or another bold red and you've got the perfect autumn meal.
