At Tacos El Champu, there's never really a slow time – it's not unusual for a line to fill up with regulars on a weekday at 2pm. But owner Myra Montes and her husband, Jose Yahir, are always up for the challenge and manage to quickly dish out street tacos, tortas and fresh fruit juices out of their bright red food truck in Springfield, Missouri.
"We are happy to be busy," Montes says. "We want our clients to be satisfied and happy."
The couple moved to Springfield from Denver nine months ago after much encouragement from Montes' sister, who believed the two could help fill a void for traditional Mexican food in the area. "We wanted to give everyone a unique and authentic taste that isn't in Springfield, especially good tacos," Montes says.
They opened up shop in Ace Hardware's parking lot on South Campbell in April, but Yahir's culinary talents and Myra's business management skills have already earned the loyalty of a repeat customer base. Yahir, whose family is from Guanajuato, Mexico, began working in restaurants when he was 15 years old. "I just like to do what I do, which is cook authentic Mexican food," he says.
Tacos El Champu's best-selling dish is the crunchy shrimp tacos topped with fresh avocado. "They look simple to make, but it has our special recipe," Montes says.
The fresh fruit juices are also earning Tacos El Champu fans. Currently, the truck serves strawberry, pineapple, mango and cantaloupe juices, and guests can also grab a housemade horchata to go.
