Keto dieters are finding a sweet spot at Delicieux Bakery in Springfield, Missouri.

At the bakery, which opened at 3757 N. State Highway H two years ago, owner Juliana Onisoru whips up Keto-friendly cakes, cheesecakes, tiramisu and more – all sweetened with monk fruit.

Juliana prides herself on the variety offered at her bakery. She and her husband, Gabriel, bake cakes, waffles, brownies, bagels, cookies, pastries and baklava. The couple are both from Romania, so Delicieux also offers 15 traditional Romanian dishes like sarmale (cabbage rolls) and mucenici with honey and walnuts.

Opening a bakery was a longtime dream for the couple. Juliana was taught to bake and cook at school from a young age, while Gabriel worked on a ship for seven years as a cook. In 2000, Juliana moved to Springfield to be with her family; Gabriel followed in 2007. Initially, Juliana operated a cleaning business, but the couple soon saved up enough money to open their own restaurant and bakery. They opened Delicieux in Springfield three years ago before settling in their current location two years ago.

While Juliana was well-versed in Romanian cooking when she moved to the United States, she taught herself how to bake American staples, such as bagels, on her own. Overall, the bakery’s best-selling items are the tiramisu and cannoli, though the Keto items are quickly gaining steam. 

The dishes are made with almond flour, so many are also gluten-free. Juliana already offered gluten-free cakes, brownies and cupcakes, but the Keto menu has attracted more customers with special dietary needs. In addition to a wide variety of pastries, Delicieux also offers wedding cakes and catering services.

Customer feedback and requests drive the ever-changing menu. Next, for instance, Juliana plans to develop a few vegan dishes.

“I try to develop recipes,” Juliana says. “The people ask me to do this or this or this and I try to do it by myself. I like to do something special. I like sweets.”

Delicieux Bakery is open Monday through Thursday from 7am to 3pm, Friday from 7am to 6pm and Saturday from 8am to 3pm.
