In Kimberling City, Missouri, All About the Taco is celebrating its first birthday.
The taco-centric food truck is a labor of love for owners Hannah and Mike Perez. “My grandma always made me cook with her, and I fell in love with cooking at an early age,” says Mike. “In 2019, I was working in construction and got laid off; I needed that push to start the food truck.”
Kimberling City is a premiere, family-friendly lakeside community in southwest Missouri, but where All About the Taco parks on Joe Bald Road, there are minimal restaurant options. It helps fill a void and fill the bellies of hungry lake-goers.
Mike got his first restaurant job at age 14, and the tacos on the menu at All About the Taco are inspired by different places he’s worked since. The Hawaiian chicken is a bestseller: Chicken is marinated in pineapple, cooked and then served with lettuce, tomato and a honey-bourbon glaze.
The glaze, along with sauces such as the honey-habanero vinaigrette, salsas and corn tortillas, are all made in-house, and they’re part of the reason these tacos stand out.
“When we started this, we wanted to do it right and cook from scratch,” says Mike.
The food truck also sells quesadillas, burritos and huge piles of nachos, and the couple hopes to continue to expand the business. “I want to get a bigger truck because what I can serve right now is limited,” says Mike. “But this year, we got a good foundation. We aren’t trying to jump in someone else’s lane; we’re trying to create our own lane.”
