Springfield, Missouri, now has a go-to place in town to get osso buco. OssoBuco Italian American Bistro opened last week, specializing in the namesake dish. Here, you can indulge in osso buco tortellini among other classic Italian dishes at the southside restaurant.

OssoBuco chef-owner Angel Kim is the culinary genius behind local staples like The Hill Italian Restaurant and ReRico Brazilian Grill. But before that, he owned Argentina Steakhouse, which provided a fine-dining experience to the community for nearly 18 years.

After closing Argentina Steakhouse to focus on opening The Hill, Kim missed fine dining. When he heard the same building Argentina Steakhouse once occupied was open once he again, he seized the opportunity to open OssoBuco is in the same spot.

In addition to appetizers like toasted ravioli, arancini and Italian nachos, the restaurant dishes up creative entrees like lasagna, cheese tortellini, butternut squash gnocchi and lobster ravioli. Spaghetti Frutti di Mare is a seafood-lover's dream, topped with shrimp, clams, mussels and scallops, and dressed in spicy arrabbiata sauce.

However, it's the osso buco, which is braised veal, that Kim hopes will bring diners in. "Throughout the years, Springfield has gotten so much, but there's not that many specialty [restaurants]," Kim says. "When you go to big cities, you can go to one place for prime rib or another specialty dish. Springfield doesn't have that. So we wanted to specialize in osso buco for people who love it."

To that end, Kim offers two types of osso buco that he slow cooks for four hours each. Ossobuco al Porto is cooked in a port wine reduction and served with saffron risotto and grilled asparagus, while Ossobucco alla Arrabbiata is served in his classic spicy arrabbiata sauce and topped with gremolata, then served with rosemary-Parmesan mashed potatoes and steamed broccoli. No matter which dish you go with, you can rest assured that Kim took great care in the preparation.
