One of my favorite parts of spring is planning and planting my garden. My excitement builds as I select seeds and eagerly get them in the ground, knowing in a few short weeks I will have fresh produce in my backyard. The best part of the entire process is getting my two young girls involved.…
Rounding the corner on a year living with pandemic restrictions, we’ve learned a lot and adapted to new habits. We’ve prioritized our health by including foods to build up our immune system, comfort and feed our souls and expand our kitchen skills by preparing meals at home. Creating fresh f…
As cold as it can be, there’s a lot to love about February. The first thing that comes to mind is Valentine’s Day on the 14th. Although it can be filled with cheesy cards and chocolates, it really is a day to remember and appreciate our loved ones. Whether this is your spouse, friends, kids …
As we enter into January, we look to new beginnings and a fresh start for the upcoming year. I haven’t always been consistent with setting resolutions, but look at this time as a good opportunity to reevaluate what’s important and think about areas of my life that need a little improvement. …
Nothing gets me into the holiday spirit like spending time baking in my kitchen. From the time I can remember, I’ve been standing on my tippy toes or propped up on a stool helping my mom prepare goodies for our holiday celebrations. My favorite memories come from learning life lessons in the…
As we prepare for the holiday season, this year is looking a little different. Traditional family gatherings may not be the same as we continue to socially distance ourselves and keep group sizes to a minimum. Adjusting to a new holiday experience may have its challenges, but I’ve found that…

Developing a Generation of Healthy Kids
One of my fondest childhood memories is planting a garden with my mom. Something about planting a seed and watching it grow always amazed me. It was like magic! Fast forward to adulthood and I have a much deeper appreciation for where food comes from and how much care goes into making it grow.
Try this heart-healthy recipe for Walnut "Chorizo" Tacos this February. Walnuts are high in omega-3 fats. While a small handful of walnuts offers superior snackability, we’ve used walnuts to create a unique spin on the classic meat taco. Top these meat-less Walnut “Chorizo” Tacos with pickled vegetables or take it up a notch by adding avocado mash, pineapple salsa or purple cabbage slaw. Trust me, your heart will thank you!
January brings fresh starts to a New Year.
This is my favorite time of year, but it’s also probably the busiest and most stressful. Our calendars are booked with parties and special events. We are hosting guests, traveling and shopping for gifts. It’s not the time of year anyone wants to transform their diet. So instead, think of small swaps you can make to your classic recipes to make your holidays a little healthier.
This time of year is always my favorite. There is so much to be grateful for, especially enjoying the company of family and friends with a home-cooked meal. Try this Stuffed Acorn Squash recipe for a healthy winter treat.
What I love most about October is the cooler weather, the smell of cinnamon and spice, the changing leaves and that fall festivities are in full swing. These things instantly conjure up fond childhood memories as I reminisce about my dad pulling my friends and I around on a hayrack ride. Our…

Nothing is more perfect for July 4th celebrations than fresh sweet corn. That might be because growing up in Nebraska our summers revolved around harvesting our sweet corn at the peak of freshness.
Before I had even heard of farm-to-table, I remember my brothers and I riding our bicycles down the dirt roads to pick up fresh honey from our neighbor. We’d race to the chicken house to gather fresh eggs. We’d pile in the pickup to get fresh cream from the dairy farmer down the road for a s…
There is something about summer and sitting on the patio or by a pool that makes me want to sip on something refreshing. If you’re like me, I get bored drinking plain ‘ol water, even though I know all the benefits and that I should be drinking more of it. Luckily, the sparkling water craze h…
Some of my happiest childhood memories involve running through the wheat fields as I played hide and seek with my two brothers on our family farm in Nebraska. As the days grew warmer and the wheat was ready to harvest, I’d hop into my dad’s lap as he drove the combine through the fields.
I have three incredibly adorable nieces and a new baby nephew. Being an aunt is an awesome job. I love all the lessons I learn from them because of their honesty, innocence, frankness and unadulterated views of how the world works.
Growing up on a farm in a little town in Nebraska, beef has been on my dinner table for as long as I can remember. A great steak thoughtfully prepared can certainly be part of a nutritious meal. Be on the lookout for lean protein choices such as the tenderloin, sirloin, flank and flat iron s…
