Tucked away in the Deer Creek Shopping Center in Overland Park, Kansas, Cultivare Greens & Grains offers a healthy and fast alternative to the fast food typically found in Kansas City’s suburbs.

With an emphasis on flavor, texture and dietary inclusivity, Cultivare Greens & Grains offers a polished “clean eats” menu that starts with fresh veggie rolls and hummus and moves into signature entrée salads and grain bowls that are made to order. The menu delivers a wide variety of international flavors and a healthy mix of veggies, proteins and grains.

Guests are also welcome to craft their own bowl by choosing a base of greens or grains and adding protein, toppings and a dressing of their choice. All bowls are reasonably priced between $9 and $12.

The new restaurant is locally owned by brothers Kerry and Kevin Goebel, who between them have years of experience in restaurant operations, real estate, construction and development. They are also partners in KC Pie, LLC, a Pie Five Pizza Co. franchisee in Kansas City and surrounding markets, and in Grit Hospitality, a food and beverage management and consulting practice.

Cultivare, a new fast-casual concept, was conceived by Kerry, who came up with the idea of developing and testing a healthy bowl concept inside one of their former Pie Five locations in the Deer Creek Center. Kevin was brought in to give the space a sleek, clean and modern look and local social media influencer Kasim Hardaway and his TKG Agency marketing partner, Nam Cu, were brought in to help do the social media marketing plan to build buzz for the new concept.

“I met Kasim and Nam working operations for another restaurant concept,” explains Kerry. “I kept thinking about this salad and grain bowl concept, and I knew I had the operations experience to run Cultivare Greens & Grains, but I needed help on the marketing, menu and recipe development side, and Kasim stepped in and helped bring a lot of great ideas and creativity to the R&D process.”

The restaurant is built for the times we live in, with the ability to order online for curbside carryout, pickup, delivery or dine-in service with the option of sitting on the outdoor patio.

The menu also shows an interest in highlighting local food artisans. The Everything Bagel salad, a creation that Hardaway had a hand in, features crisp romaine lettuce and kale, tomato, red onion, cucumbers, fresh dill, smoked salmon, everything bagel seasoning and Everything Bagel croutons form locally-owned Meshuggah Bagels, with creamy dill dressing.

“We are really excited about this, and I know it seems like a crazy time to do a restaurant, in the middle of a pandemic, but we think the time is right for this kind of food,” says Kerry. “This is how people want to eat right now, and we want to make it easy for anyone to eat the way that they want to on any given day.”

The menu features a hearty steak and Gorgonzola salad, a chicken BLT salad and a Hanoi chicken salad, along with a Southwest grain bowl, Mediterranean bowl and miso-mushroom bowl with white quinoa, massaged kale, beets, sweet potato and sesame-yuzu mushrooms topped with a housemade savory granola made with pistachios, sunflower seeds, pumpkin seeds, tahini and agave for a touch of sweetness. That bowl is topped with a standout miso-maple salad dressing.

“I wanted to create a menu that was fresh and health-forward, not healthy-focused,” says Hardaway. “There are so many people who want to eat better, but there is often this feeling that you have to sacrifice flavor to eat healthy food. I thought a lot about the layering of flavors and textures in each of our bowls, and I wanted people to eat with their eyes first so I paid special attention to how things looked in the bowl.”

To drink, Cultivare offers Tractor organic beverages, including all-natural sodas in flavors like blood orange, lemongrass, coconut and cherry cream, along with lemonade and tea. Topo Chico and Spindrift sparkling waters are also available. For those looking for an adult beverage, Cultivare offers a couple of seasonal cocktails and five to six familiar, quaffable wines.

Cultivare Greens & Grains is a local, fresh and forward-thinking new concept that is a great addition to the suburban culinary landscape in Kansas City.
