Fast Casual: Main Squeeze

Leigh Lockhart was at the forefront of the fast-casual trend when she opened her brick-and-mortar vegetarian café, Main Squeeze, in Columbia in 1998. Soups, salads, sandwiches and wraps are served alongside all-natural juices and smoothies.
