Yemeni and Mediterranean fare are the focus at Aban’s Kitchen in Carbondale, Illinois. Since opening in 2016, the restaurant has served specialties such as chicken shawarma and lamb fahsah, minced lamb boiled with vegetables and soup in a clay pot.
A separate menu with vegetarian entrées features items such as home-style Yemeni stew and foule, mashed fava beans sautéed with onion, tomatoes and house seasoning.
Be sure to order extra housemade bread, cooked in Aban’s clay oven, for soaking up sauce.
