Need to cool off? These spritzers pair pineapple with mint and lime, creating a summer sipper as refreshing as a dip in a cold pool. Zero-proof, they get their fizz from sparkling water and can be enjoyed by the whole family.
Pineapple-Mint Spritzers

- ¼ cup sugar
- ¼ cup water
- 3 sprigs mint, plus more for garnish
- ½ cup fresh lime juice
- 1 cup pineapple juice
- 3 cups sparkling water, preferably Topo Chico
- 15 fresh mint leaves
- ½ cup fresh pineapple, cut into ½-inch cubes
- ice
- 1 lime, cut into thin slices
| Preparation | In a small saucepan, combine sugar and water. Set over medium heat and bring to a boil, stirring to dissolve sugar, approximately 1 minute. Remove from heat and add mint sprigs; let steep, 10 minutes. Remove mint leaves and discard. Pour mint simple syrup into a container and place in refrigerator to cool.
In a large pitcher, combine cooled mint syrup, lime juice, pineapple juice and sparkling water. For each spritzer, lightly muddle 3 mint leaves and 1 tablespoon fresh pineapple in a glass. Pour liquid into glasses; add ice and a slice of lime. Serve cold.
