Chef Ben Poremba’s long-anticipated restaurant Old Standard Fried Chicken will open in St. Louis' Botanical Heights on Fri., Oct. 17.

Old Standard extends Poremba’s business presence in the Botanical Heights neighborhood. The new restaurant is located at 1621 Tower Grove Ave., just a half-block north of Poremba’s Elaia and Olio, and La Patisserie Chouquette, a partnership between Poremba and pastry chef Simone Faure.

The interior of Old Standard is warm and rustic – white oak and oak plywood dominate the space, which is left unfinished in spots but conveys Poremba’s strong sense of style. The interior is the work of carpenter Ryan Giancola. “At night it’s golden,” Poremba says, standing beside an oak bar hewn from a single tree. A photo mural of a cornfield in autumn by photographer Greg Rannells will dominate the back wall.

Faure says that no one does “concept” better than Poremba. The overall feel of the room is vintage rural chic – with hunting paraphernalia, green and dried plants and old equipment adding to the wood-dominated décor.

And the menu is an eclectic mix of American standards with Poremba’s hand evident throughout: pickles, boiled peanuts, pimento cheese and country ham with fried focaccia. 

And, of course, chicken. Sourced from Miller Poultry in Orland, Indiana, birds are humanely raised by the Amish family and fed an all-vegetable, drug-free diet. In Old Standard’s kitchen, they’ll emerge a dark golden brown, crispy and moist.

Faure’s baking takes a prominent place on the menu in the form of biscuits, which will be served with a variety of accompaniments including a selection of compounded butters, and jams made from stone fruits, burnt oranges and concord grapes.

Traditional side dishes will be available, including greens, slaw, cream corn, green beans and mashed potatoes and gravy. The restaurant will serve waffles on Sundays.

The bar is carrying an astonishing 50 American whiskeys as well as canned beers (only one beer on tap from Urban Chestnut Brewing Co.) and a solid lineup of traditional cocktails. The restaurant also features three types of lemonades and housemade sodas. 

Old Standard will be open 4:30pm to midnight Monday through Saurday. On Sundays, brunch is served from 11am to 3pm followed by an early supper from 3 to 8pm.
