Mushroom Stuffing

Try this new take on stuffing this Thanksgiving. 

Mushroom Stuffing

Serves | 6 to 8 |

  • 2 oz butter
  • 1 medium onion, diced
  • 2 stalks celery, coarsely chopped
  • 8 oz fresh mushrooms, or 1 oz dried Ozark Forest Mushrooms, soaked
  • 1 Tbsp chopped parsley or sage
  • salt and freshly ground black pepper, to taste
  • 8 oz fresh white bread croutons
  • 2 eggs, beaten
  • 1 cup chicken or vegetable broth

| Preparation | Preheat oven to 375°F. In a saucepan, add butter, onion, celery and mushrooms and sauté over medium-high heat for 2 to 3 minutes, until softened. Turn off heat and add herbs, salt and pepper to taste and croutons. Add egg and stir until mixture is bound together. Add broth until stuffing is moist, but not soggy. Spread mixture evenly in greased glass dish and bake for 35 to 45 minutes until crispy on top. Serve warm.
