Spice up classic roasted carrots with this recipe. Chef Jason Tilford of Mission Taco Joint perfects his fall-inspired carrots with a glaze made with cream, butter and agave chipotle puree before roasting until caramelized.
Chipotle-Agave Glazed Carrots

- 2 lbs carrots
- ½ cup cream
- ¼ stick butter
- ⅓ cup agave
- ⅓ cup chipotle puree
- 2 Tbsp salt
| Preparation | Peel the carrots and prepare a pot of water that will hold them. Boil for 8 to 10 minutes until they are fork-tender. Remove, drain and cool in ice water. Remove carrots when cool and pat dry.
Preheat the oven to 375°F.
Prepare the glaze by adding the cream and butter in a small pot and simmer until butter melts. Add agave, chipotle and salt; reduce the glaze by half. Let the glaze cool for 5 to 10 minutes to thicken. Brush the carrots with ¾ of the glaze and place on a baking sheet. Roast the carrots for 15 minutes and remove. Place on serving platter and top with remaining glaze.
