Granola with Date Syrup and Sugar

Granola with date syrup and sugar.

This crispy granola gets its gentle sweetness from date syrup and date sugar.

Serves | 3 |

  • 2 cups rolled oats
  • ²⁄₃ cup whole almonds
  • ²⁄₃ cup unsweetened shredded coconut
  • ¹⁄₃ cup date syrup
  • ¼ cup date sugar
  • 3 Tbsp coconut oil
  • 2 Tbsp chia seeds
  • 1½ Tbsp raw sunflower seeds
  • 1½ Tbsp flax meal
  • 2 tsp ground cinnamon
  • 3 Tbsp goji berries
  • ¼ cup dried apricot, chopped
  • ¹⁄₃ cup dates, pitted and chopped

| Preparation | Preheat oven to 275°F. Line a baking sheet with parchment paper and set aside.

In a large mixing bowl, combine all ingredients except goji berries, dried apricot and dates and mix using a spatula. Spread granola evenly over prepared baking sheet. Bake 20 to 30 minutes, or until a light golden brown. Once cool, add remaining ingredients and toss to combine. Will keep up to 2 weeks stored in an airtight container.
