GoPo Gourmet Popcorn Bar is making a small move to a big space.

GoPo’s kitchen is currently housed in 526 Court Street in Fulton’s Brick District, but owners Brooke and Nicholas Bartlett are moving their business one door down to 525, a three-story building they’ve transformed into a popcorn bar and event space. Although GoPo has been available for purchase in several mid-Missouri boutiques and by subscription for several years, the Bartletts’ goal has always been to have a brick-and-mortar location.

“We’re really excited to actually recognize our original vision for the popcorn, which is to ‘eat it live,’ so to speak,” Brooke says. “You can see us making it, you can sit down at a table, you can have a coffee or a soda and just hang out.” The retail area will be on the ground floor, the mezzanine level will be an open kitchen, and the top floor will be available to rent for events.

In anticipation of the move and the changes that would come with it, the couple updated their company’s name from CoMo GoPo to GoPo Gourmet Popcorn Bar last year. “We’re going to have an 18-foot popcorn bar in the middle of the floor,” Brooke says. “You can buy and fill up your own cup with whatever flavors you want; we’ll have a one-time fill and a bottomless cup.” There will be six constant flavors and four seasonal varieties on offer at the bar. The entire theme of the space will change monthly, Bartlett says. “We’ll have some different games at the tables every month for families or students to play and just try to make it a full experience.”

Craving popcorn for breakfast? The shop will open its doors at 7am, serving Camacho Coffee alongside the corn, and will stay open until 8pm. Bartlett says she hopes to cater to those looking for a fun and inexpensive weeknight or weekend food excursion. “Sometimes people don’t want to go and spend a huge amount on dinner, but they still want to go out, and we think that we’re definitely that middle ground,” she says. “[It’s a place to go to] get out of the house, find an activity to do, have some face-to-face time and popcorn while you’re at it.”

Although Fulton will now be the main hub for GoPo, its popcorn will still be available at Plume in Columbia, Southbank Jefferson City and by subscription. Keep an eye out for GoPo’s official opening date later this spring.

GoPo Gourmet Popcorn Bar is open Thursday through Saturday from 10am to 4pm.
