“Scandinavians love their coffee,” Vildhäst owner Katee McLean says. “They’re always finding new ways to enjoy coffee, from egg coffee to coffee lemonade.” The iced kaffe lemonade is served year-round at Vildhäst, though McLean says it’s typically enjoyed as a seasonal specialty in warm weather.

Iced Kaffe Lemonade

Yield | 2 cups |

Lemon Zest Simple Syrup

  • 1 cup cane sugar
  • 1 cup water
  • Zest of one medium-sized lemon

| Preparation | In a saucepan, combine the sugar, water, and lemon zest and place on medium heat. Stir regularly until the sugar has dissolved, then remove from heat. Let cool, then pour into a glass bottle and store in the refrigerator.

Iced Kaffe Lemonade

  • 3 parts brewed coffee (cold brew is great, but the leftover from your morning French press is fine too)
  • 2 parts fresh squeezed lemon juice
  • 1 part lemon zest simple syrup (recipe above)
  • 2 parts tonic water
  • Ice cubes

| Preparation | Combine all ingredients in a glass and stir vigorously then pour into a glass. Add more tonic water if needed.
