Curried Sweet Potatoes

Serves | 4 |

  • 1 Tbsp olive oil
  • ½ cup Thai red curry paste
  • ½ cup brown sugar
  • 1 12-oz can coconut milk
  • 1 lb sweet potato, large dice
  • 1 cup chopped cilantro
  • juice and zest of 1 lime
  • salt and freshly ground black pepper, to taste

| Preparation | In a medium saucepan, heat olive oil over medium heat; add red curry paste and brown sugar. Let mixture caramelize for 1 to 2 minutes. With a whisk, stir in coconut milk. Add sweet potato and simmer for 15 to 20 minutes, or until potato is tender. Stir in chopped cilantro and lime juice and zest. Adjust seasoning to taste and serve immediately.
