When you're spending the final hazy days of the season on a gently rocking boat enjoying life's simple pleasures, dinner duty doesn't seem appealing. No worries. Beer in hand, you will feed the crew in style. Take a stab at a few of these easily composed dishes.

The focus of these four recipes is on bright flavor, light ingredients and as little effort as possible. If you've got a grill on deck with a side burner, you don't even have to heat up the galley. Life is good.

Roasted-Pepper Bruschetta with Lemon Chèvre and Summer Savory

Mahi-mahi Ceviche in Avocado Cups

Mediterranean "Dock" Shrimp

Cherry Tomato Couscous with Charred Corn and Zucchini

Toasted Pound Cake with Fresh Summer Berries and Rebecca Sauce
