Adam Tilford may have just welcomed a baby into his family—on Cinco de Mayo, no less—but that hasn’t stopped him and his brother, Jason, co-owners of Milagro Modern Mexican and Tortillaria, from keeping the ball rolling with thoughts of expansion.
“We’ve had some pretty great success with our Mexican-themed restaurants,” says the new father about the plans. “We’d just like to have some more fun with it.”
The brothers’ ambitious project is actually multi-pronged in its approach. The Tilfords want to create another Milagro-esque concept in West County, as well as both a more casual and a more upscale Mexican-themed concept in the near future.
“Milagro was originally supposed to be a bit different concept,” explains Tilford of his desire for a higher-end eatery. “However, with our location in Webster, we realized that we wanted to create something a bit more family driven.”
The upscale concept is a more intimate restaurant involving a coastal approach to Mexican cuisine (think ceviche and a menu based on seafood-driven entrees), while the casual idea incorporates more tacos and tortas. The brothers’ hope is to add several more restaurants to their burgeoning Latin empire in just a few short years, and because of that they’ve been scouting locations in Chesterfield, Clayton, Soulard, and everywhere in between.
“We have definite locations and places where we want each restaurant based on demographics and the surrounding community,” Tilford says. “We’re just waiting for the right opportunities.”
