As Robust Wine Bar & Café continues to grow, owners have decided to bring on hospitality-industry veteran Gregg Doyle as director of operations effective Mon., July 9.

Doyle will oversee all operations for the award-winning Webster Groves location as well as the in-the-works location at the Mercantile Exchange building at the corner of 7th Street and Washington Avenue in Downtown St. Louis.

A 20-year veteran in all aspects of the hospitality business, Doyle’s experience spans more than five countries, including Spain, Portugal, England, Ireland and the United States. In St. Louis, he served as a corporate trainer for Crazy Fish restaurants, principal wine buyer for Figaro (formerly of Clayton) and most recently as group general manager of Mosaic Restaurants.

During his time with Mosaic, Doyle furthered the expansion of the brand to multiple St. Louis areas including two Washington Avenue locations, Des Peres and St. Louis International Airport at Lambert Field.

Doyle joins a team of professionals that has reached new heights since Robust began plans for expansion, owners say. In February, Lauren Blake, experienced sommelier and mixologist from Aspen, Colo., joined the Robust team as wine and spirits curator, and highly regarded chef Joseph Hemp, formerly with Annie Gunn’s and Brasserie, was named executive chef.
