St. Louis food blogger Elizabeth Cowie launched Eating Local in the Lou only six months ago, and it recently landed a brief mention in a national culinary magazine.

Flip to page 25 of the May issue of Cooking Light, and you’ll find her name and blog. Cowie was featured as Cooking Light’s Superfast Fan of the Month for her spin on the magazine’s Superfast Shrimp with Lemon-Saffron Rice recipe, for which she included local and sustainable ingredients. For the monthly section, Cooking Light invites readers to prepare any of the magazine’s Superfast dishes and write in about how their families enjoyed them, the tweaks they made and other details.

"I'm tickled pink," Cowie says about the inclusion. She says she's had "a lot of a lot of fun" with Eating Local in the Lou and has "learned a lot from the experience."

In the About Me section of the blog, Cowie, a dietitian/nutritionist, states that it's "not just about foods found in the St. Louis region. It’s about being aware of where our food comes from, celebrating foods from the region and eating foods in season, no matter where we live. I try to highlight farms and producers where my ingredients originate, not to suggest that yours have to come from the same place, but rather to give credit to the growers that have provided my family with delicious and fresh foods. All of the recipes that I feature can be adapted to what is seasonal and available in your area.”
