As announced earlier today, chef John Griffiths will be leaving Truffles next month to begin work on a new restaurant that is projected to open this fall. Griffiths was initially approached by his now business partner(s) a little more than a month ago, and as the concept quickly built steam, he thought that it was necessary to commit to it full time.

“It was evident that I had to leave because of how quickly the project took off,” says Griffiths about staying on at Truffles through mid-April. “But I also wanted to make sure that [the new executive chef Brandon Benack] and the restaurant experienced a smooth transition.”

Although not willing to divulge the name or location of the new restaurant, Griffiths says he'll be staying true to the ingredient-driven ethos that has been held in such high regard in his soon-to-be-former kitchen.

“It’s going to be more casual, but it’s still essentially the same,” Griffiths says. “It’s modern Italian rustic.”

Griffiths will still participate in the James Beard dinner this June in Manhattan but as an independent chef.
