UPDATE: Mon., Oct. 1, 10:33am - A recently issued press release confirms that Capitalist Pig will indeed be opening on Wed., Oct. 10, as we reported below on Tue., Sept. 18.

More information on the venture from the release:

"Capitalist Pig takes its inspiration from the idea of fine, handcrafted barbecue. Capitalist Pig’s artisan barbeque is made with care, using old-fashioned smoking and curing methods that take more time and produce a better product. It is the juxtaposition of fine food and the time-honored tradition of making great meat.

"Capitalist Pig serves meat from animals raised on small, sustainable farms. We source our meat from local and regional farmers who raise their animals with care. These animals have never been given antibiotics or hormones and have a strictly vegetarian diet. Our farmers raise their meat outdoors on actively managed pastures.

"At Capitalist Pig, we are passionate about barbeque. We are also passionate about our community. We want to show our customers and our city that it is possible to operate a business that is sustainable and environmentally sound. We support local farmers and procure our products from sustainable sources. Capitalist Pig practices recycling and composting. You will not find Styrofoam carry out containers at Capitalist Pig. Our containers are compostable. From farm to table, we have created an environmentally conscious, artisan barbecue experience that ends with you enjoying delicious food people can feel good about."

Back in June, we reported that Mad Art Gallery owner Ron Buechele was working to open a sustainable artisan barbecue restaurant, Capitalist Pig, in the south end of the gallery.

He had initially been shooting for an August opening, and a couple posts on Capitalist Pig's Facebook page throughout the summer built anticipation among followers. Now, folks eager to get a bite of the fare don't have much longer to wait.

A recent post on Capitalist Pig's Facebook page announced the opening date:

"No more teasers, Capitalist Pig is officially opening on Wed. Oct. 10th at 11am.....damn the torpedos, full speed ahead."
