The culinary team at The Ritz-Carlton, St. Louis, will be leading a day of instruction to help parents up the health value of their children’s school lunches and make the midday meals more appealing.

The upscale Clayton hotel’s class, Back to School – Modern Day Lunch Bag, is scheduled from 8am to 2pm on Sat., Aug. 25.

Members of The Ritz-Carlton, St. Louis' culinary team will provide preparation tips and recipes for healthy and tasty alternatives to the typical school sack lunch. Instruction will be provided throughout The Ritz-Carlton, St. Louis, kitchens. Class participants will prepare a lunch, served with wine, in The Grill following the class.

The class will feature:

  • Spreads
  • Dips, salads and dressings
  • Sweets, treats and snacks
  • Parfaits and smoothies

The class also will cover sandwiches, including:

Grilled Portobello and Avocado Wrap: Arugula, Feta, Vine Ripe Tomatoes, Grilled Onions, Whole Wheat Tortilla

Chick Pea Po'boy: Lemon Garlic Butter, Cajun Hummus Dressing, Pickled Shallots ,Chibiata

Curried Chicken Pita: Indian Spiced Chicken, Dried Cranberry Chutney, Alfalfa Sprouts, Whole Wheat Pita

In addition to the hands-on instruction, attendees will receive a recipe booklet for the items covered during the class. The cost of the class is $79 per person, which includes coffee and a continental breakfast. Space is limited to 25 guests. To make reservations, call 314.719.1433.
